Irresistibly Crunchy Garlic Parmesan Roasted Zucchini

A scrumptious dish that transforms humble zucchinis into a crunchy, flavor-packed delight, perfect for a side dish or snack.

  • 4 medium zucchinis (sliced into 1/4-inch thick rounds)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup Parmesan cheese (grated)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley (chopped for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into 1/4-inch thick rounds.
  3. Coat the zucchini with olive oil, garlic, Italian seasoning, salt, pepper, and Parmesan cheese until evenly mixed.
  4. Spread the zucchini rounds on a baking sheet lined with parchment paper.
  5. Roast in the oven for 20-25 minutes, flipping halfway through until crispy and golden.
  6. Garnish with fresh parsley and serve immediately.

Notes

For a spicier version, add red pepper flakes. You can also substitute Parmesan with nutritional yeast for a vegan option.
