  • 8 oz elbow macaroni
  • 1 cup pumpkin purée
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 cup milk
  • 2 tbsp butter
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Once done, drain and set aside.
  2. Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Stir in the pumpkin purée, followed by the milk. Whisk until well combined.
  3. Add the Cheese: Gradually add your shredded cheese a handful at a time, stirring constantly until it melts into a creamy sauce.
  4. Season the Sauce: Sprinkle in the cinnamon, nutmeg, smoked paprika, salt, and pepper. Stir to combine.
  5. Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce and stir gently to coat.
