  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup goat cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add in the chopped onion and sauté for about 5 minutes until they turn translucent and fragrant.
  2. Add the garlic: Toss in the minced garlic and stir for 1 minute until just fragrant.
  3. Add the broccoli: Introduce the broccoli florets, stirring together with the onions and garlic for about 2-3 minutes.
  4. Pour in the broth: Add the vegetable broth and bring to a gentle boil. Reduce heat and let it simmer for about 15 minutes until the broccoli is tender.
  5. Blend the soup: Use an immersion blender to puree the soup until smooth. For an extra creamy texture, reserve some broccoli florets to add back in after blending.
  6. Stir in the goat cheese: Return the soup to low heat and stir in the crumbled goat cheese until melted and incorporated.
  7. Season and serve: Taste and add salt and pepper as needed, then serve hot, garnished with extra goat cheese and a drizzle of olive oil.

Notes

This soup freezes beautifully. For a vegan version, substitute goat cheese with cashew cream or coconut cream.
