Cozy Autumn Wild Rice Soup

A warm and hearty wild rice soup perfect for autumn, filled with earthy flavors and comforting aromas that evoke childhood memories.

  • 1 cup Wild Rice
  • 6 cups Vegetable Broth
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 1 cup Pumpkin Puree
  • 1 teaspoon Thyme, dried
  • 2 Bay Leaves
  • Salt and Pepper, to taste
  • ½ cup Cream or Coconut Milk

Instructions

  1. Prepare the Wild Rice: Rinse the wild rice under cold water until the water runs clear.
  2. Sauté the Aromatics: In a pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté for about 5-7 minutes.
  3. Add Garlic & Spices: Stir in garlic, thyme, and pepper. Sauté for another minute.
  4. Combine the Ingredients: Mix in rinsed wild rice and pumpkin puree and stir together.
  5. Pour in the Broth: Add vegetable broth and bay leaves. Bring to a boil, then reduce heat and cover. Simmer for 45 minutes to 1 hour.
  6. Let it Thicken: As the soup simmers, the wild rice absorbs the broth. Adjust the thickness as needed.
  7. Final Touches: Stir in cream or coconut milk, season with salt and pepper, and remove bay leaves before serving.
