1 cup lentils
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups vegetable or chicken broth
1 can diced tomatoes
1 tsp cumin
Salt and pepper to taste
Fresh herbs (parsley or cilantro)
Instructions
Sauté the aromatics: In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables soften.
Add the garlic: Toss in the minced garlic and sauté for another minute until fragrant.
Stir in the lentils and spices: Add the lentils and cumin, stirring to combine.
Add tomatoes and broth: Pour in the diced tomatoes and broth. Bring to a simmer, cover, and reduce heat. Let it cook for 25-30 minutes, or until lentils are tender.
Finish with herbs: Once cooked, season to taste with salt and pepper. Stir in the fresh herbs just before serving.
