Slow Cooker Chicken and Dumplings

A cozy, comforting dish featuring tender chicken and fluffy dumplings, perfect for busy weeknights.

Ingredients

  • 2 lbs Chicken (boneless, skinless thighs or breasts)
  • 3 Carrots (sliced)
  • 2 Celery stalks (chopped)
  • 1 Onion (diced)
  • 4 cups Chicken broth
  • Dumplings (refrigerated or homemade)
  • 1/4 cup Parsley (chopped)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare your slow cooker: Start by greasing the inside of your slow cooker with a touch of olive oil or cooking spray.
  2. Chop the veggies: Dice the onions, slice the carrots, and chop the celery into bite-sized pieces.
  3. Layer the chicken: Place the chicken at the bottom of the slow cooker and season generously with salt and pepper.
  4. Add the veggies: Dump your chopped onions, carrots, and celery on top of the chicken.
  5. Pour in the broth: Carefully pour the chicken broth over your chicken and veggies.
  6. Cook low and slow: Cover and set to low for 6-8 hours or high for 3-4 hours.
  7. Add the dumplings: About 30 minutes before serving, tear refrigerated dumplings and lay them on top of the stew.
  8. Finish with freshness: Sprinkle chopped parsley on top to serve.

Notes

This dish can be prepped the night before. Store leftovers in an airtight container in the fridge for up to 4 days.
