Comforting Vegetarian Soup

A nourishing vegetarian soup perfect for cold days, filled with tender vegetables and warm spices.

Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 2 medium Potatoes, peeled and diced
  • 4 cups Vegetable Broth
  • 1 can Canned Tomatoes, diced
  • 2 cups Spinach, fresh or frozen
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • Salt and Pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and stir for another minute until fragrant.
  3. Add the diced carrots and celery, cooking them for another 3-4 minutes until they start to soften.
  4. Mix in the diced potatoes and stir to combine.
  5. Incorporate the vegetable broth and canned tomatoes. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until the potatoes are tender.
  6. Add the spinach for the last few minutes, allowing it to wilt down. Season with oregano, basil, salt, and pepper.
  7. Serve the soup in bowls, garnished with fresh herbs or a drizzle of olive oil.

Notes

Feel free to experiment with seasonal vegetables and spices. Soup is forgiving to adjustments!
