Butternut Squash Soup

A creamy and comforting butternut squash soup perfect for cozy autumn evenings.

Ingredients

  • 1 medium butternut squash
  • 1 onion
  • 2 cloves of garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt & pepper to taste

Instructions

  1. Start by peeling and chopping the butternut squash into cubes.
  2. In a large pot, sauté the diced onion and minced garlic until soft and fragrant.
  3. Add the butternut squash to the pot and stir for a couple of minutes.
  4. Pour in the vegetable broth, bringing everything to a boil, then reduce to a simmer until the squash is tender.
  5. Blend until smooth, return to heat, and stir in the cream. Season with salt and pepper.

Notes

For a dairy-free option, substitute heavy cream with coconut milk.
