Classic Caesar Salad

A refreshing Caesar salad with a homemade dressing that brings comfort and nostalgia.

Ingredients

  • 1 head Romaine Lettuce
  • 2 cloves Garlic, minced
  • 1/2 cup extra virgin Olive Oil
  • 1/2 cup Parmesan Cheese, grated or shaved
  • 1 cup Croutons
  • 1/4 cup Lemon Juice, freshly squeezed
  • 1 tsp Anchovy Paste (optional)
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Start by washing the Romaine lettuce thoroughly to get rid of any dirt or grit. Dry it well; either pat it down with a clean kitchen towel or use a salad spinner.
  2. In a small bowl, combine minced garlic with a pinch of kosher salt. Use the back of a fork to mash them together — this releases the essential oils and flavors from the garlic.
  3. To the garlic mixture, whisk in the lemon juice, then gradually drizzle in the olive oil while whisking to emulsify the dressing. Finally, stir in the grated Parmesan cheese.
  4. In a large bowl, add the torn Romaine lettuce and drench it with the homemade dressing. Toss gently with your hands or salad tongs to ensure each leaf is coated.
  5. Next, sprinkle in plenty of croutons over the top. Add more shaved Parmesan cheese if you’re feeling indulgent!
  6. Finally, season with freshly cracked black pepper and a pinch of salt to taste. Toss once more to combine.

Notes

For extra creaminess, add a tablespoon or two of mayonnaise or Greek yogurt to the dressing.
