Apple Pie Breakfast Tacos

  • 2 cups Apples, peeled and diced
  • 1 cup Oats or flour
  • 2 large Eggs
  • 1/2 cup Milk or non-dairy alternative
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 tbsp Maple syrup, honey, or brown sugar
  • Small tortillas or crepes

Instructions

  1. Prep your apples: Peel and dice apples into small chunks and toss them into a bowl.
  2. Cook the apple mixture: In a skillet over medium heat, toss diced apples with cinnamon and nutmeg. Cook for 5-7 minutes until softened.
  3. Mix the dry ingredients: In another bowl, combine oats (or flour) with remaining cinnamon and nutmeg.
  4. Whisk the wet ingredients: In a separate bowl, whisk eggs and milk (or non-dairy). Pour wet mix into dry mix and stir until combined.
  5. Combine everything: Add the cooked apples to the oat/flour mixture and stir gently.
  6. Cook the taco shells: Heat tortillas or crepes in a skillet for 20-30 seconds on each side.
  7. Fry the batter: In the skillet, add oil or butter and pour in apple mixture in pancake-sized rounds. Cook for 5-7 minutes, flipping once golden brown.
  8. Assemble your tacos: Place apple pancakes in warm tortillas, drizzle with maple syrup, and top with yogurt or whipped cream if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat as needed.
