  • 2 cups cooked rice (white or brown)
  • 1 avocado, sliced
  • 1 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, black beans, corn

Instructions

  1. Mix the marinade: In a small bowl, whisk together olive oil, lime juice, salt, pepper, and half of the chopped cilantro.
  2. Marinate the steak in a shallow dish or resealable bag for 30 minutes.
  3. Cook the rice according to package instructions.
  4. Fluff the rice with a fork and add a drizzle of olive oil and lime juice.
  5. Preheat your grill or skillet over medium-high heat.
  6. Sear the steak for about 4-5 minutes per side, then let it rest for 5-10 minutes.
  7. Slice the steak against the grain into thin strips.
  8. Layer the bowl starting with rice, then steak, avocado, cilantro, and optional toppings.
  9. Squeeze more lime juice over the top before serving.

Notes

For a spicy kick, add sliced jalapeños. Skip the steak for a vegetarian option with extra veggies.
