Chocolate Zucchini Cookies with White Chocolate Chips

Deliciously chewy cookies featuring zucchini and white chocolate chips for a rich, flavorful treat.

  • 1 cup grated zucchini
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out moisture using a kitchen towel.
  3. Cream the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
  6. Combine the dry ingredients with the wet ingredients, mixing on low speed until incorporated.
  7. Fold in the grated zucchini and white chocolate chips.
  8. Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until edges are set and tops look slightly cracked.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a vegan version, use coconut oil instead of butter and flaxseed meal as an egg substitute.
