Chocolate Chip Zucchini Bread

Ingredients

  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchini and squeeze out excess moisture.
  3. Combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract in a mixing bowl.
  4. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  5. Gradually add the dry mixture to the wet mixture and stir gently until just combined.
  6. Fold in the chocolate chips.
  7. Grease a 9×5 inch loaf pan.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for about 50-60 minutes or until a toothpick comes out clean.
  10. Cool the loaf in the pan for 10 minutes before transferring to a wire rack.

Notes

For a healthier alternative, substitute vegetable oil with applesauce. Store leftovers in an airtight container for up to 3 days.
