Chocolate Chip Zucchini Bread

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup chocolate chips
  • ½ cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate your zucchini and squeeze out excess moisture using a clean towel or cheesecloth.
  3. In a large bowl, combine the melted vegetable oil, granulated sugar, and brown sugar. Whisk until smooth, then add the eggs one at a time and the vanilla extract.
  4. In another bowl, combine the flour, baking soda, baking powder, salt, and ground cinnamon.
  5. Add the dry ingredients to the wet mixture gradually, stirring until just combined. Fold in the zucchini, chocolate chips, and pecans.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
