Chocolate Chip Zucchini Bread

A delightfully moist and chocolaty zucchini bread that evokes warm memories and perfect for any time of the day.

Ingredients

  • 1 cup grated zucchini
  • 1/2 cup applesauce
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pan.
  2. Grate the zucchini and wring out excess moisture with a kitchen towel.
  3. Combine zucchini, applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla in a mixing bowl and whisk until smooth.
  4. Whisk together flour, baking powder, baking soda, salt, cinnamon, and any additional spices in another bowl.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Add the chocolate chips and reserve some for topping if desired.
  7. Pour batter into the prepared loaf pan and level the top.
  8. Bake for 50-60 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then turn onto a wire rack to cool completely.

Notes

Serve warm with butter, cream cheese, or a scoop of ice cream for a delightful treat.
