Cherry Clafouti

A simple and elegant French dessert made with fresh cherries and a custardy batter, perfect for sweet indulgence.

  • 2 cups fresh cherries, pitted
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cherries by pitting them and cutting them in half if desired.
  3. Blend the eggs and sugar together until smooth and creamy, then whisk in the milk and vanilla extract. Gradually add the flour and salt while whisking until combined.
  4. Pour half of the batter into a greased 9-inch pie dish, scatter the cherries on top, then pour the remaining batter over the cherries.
  5. Bake for 35-40 minutes until puffed and golden brown.
  6. Dust with powdered sugar before serving, optionally pairing with whipped cream or vanilla ice cream.

Notes

For a vegan option, use flax eggs in place of regular eggs. Customize your clafouti with other fruits or spices as desired.
