  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 16 ounces maraschino cherries (chopped)
  • 1 cup powdered sugar
  • 2 to 3 tablespoons heavy whipping cream (or milk)
  • 1/2 teaspoon almond extract (for glaze)
  • 1 to 2 drops cherry extract (or 1 tablespoon maraschino juice)

  4. Combine the dry mixture into the wet ingredients, mixing gently until just combined.
  5. Fold in the chopped maraschino cherries.
  6. Pour the batter into the prepared loaf pan, smoothing the top, and bake for 45-55 minutes until a toothpick comes out clean.
  7. Cool the bread in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Prepare the glaze by combining powdered sugar, heavy cream (or milk), almond extract, and cherry extract until smooth.
