Charlotte Poire Chocolat

A delightful chocolate pear charlotte that combines the rich flavor of dark chocolate with sweet, juicy pears for an enchanting dessert experience.

  • 4 ripe pears (Bartlett or Anjou), peeled and sliced
  • 200g dark chocolate (at least 70% cocoa)
  • 300ml heavy cream
  • 100g sugar
  • 1 packet of ladyfinger biscuits
  • 1 tablespoon of vanilla extract
  • Butter (for greasing)

Instructions

  1. Prepare your ingredients by gathering them together.
  2. Preheat your oven to 350°F (175°C).
  3. Peel and slice the pears. (Soak in lemon juice to prevent browning.)
  4. Melt the dark chocolate over a double boiler or in the microwave.
  5. Whisk the heavy cream until soft peaks form.
  6. Combine the melted chocolate with the whipped cream gently.
  7. Add sugar and vanilla extract, folding until mixed.
  8. Assemble the charlotte by lining a cake pan with ladyfingers and layering mousse and pears.
  9. Chill the dessert in the refrigerator for at least 4 hours.
  10. Serve the charlotte with a dusting of powdered sugar and caramel drizzle.
