Caramelized Pear Cake

A delicious Gâteau aux Poires Caramélisées that combines tender caramelized pears and a moist cake, evoking nostalgia and comfort.

Ingredients

  • 5 pears (divide into 3 + 2)
  • 200 g all-purpose flour (or 150 g flour + 50 g hazelnut or almond flour)
  • 0.5 sachet baking powder (about 5 g)
  • 250 g sugar (divided; 150 g + 100 g)
  • 1 sachet vanilla sugar
  • 3 eggs (separated; 2 for the batter, 1 for the cream)
  • 1 large pinch of salt
  • 130 g butter (divided; 60 g + 70 g)
  • 60 ml milk

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Prepare the pears by peeling and slicing three, while keeping the last two for the top.
  3. Caramelize the sliced pears with 60 g of butter and 100 g of sugar for 5-7 minutes until tender.
  4. Make the batter by beating 2 egg yolks with 150 g of sugar until fluffy, then adding melted butter, milk, and vanilla sugar.
  5. Combine the dry ingredients and mix into the wet mixture until just combined.
  6. Whip the egg whites to stiff peaks and gently fold into the batter.
  7. Assemble the cake by pouring half the batter into a buttered pan, layer the caramelized pears, then pour the remaining batter and top with the last two pear slices.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes before transferring to a wire rack. Sprinkle with powdered sugar to serve.

Notes

Serve with a dollop of whipped cream or ice cream and a drizzle of caramel sauce for extra indulgence.
