Ingredients

Scale
  • 2 pounds fresh black mission figs
  • 1 cup granulated sugar
  • 1/3 cup honey or agave
  • 1 1/2 tablespoons fresh lemon juice
  • 67 sprigs fresh thyme or 1 teaspoon dried thyme

Instructions

  1. Prepare Your Figs: Rinse the figs under cold water, pat them dry, trim off the stems, and quarter them.
  2. Combine Ingredients: In a large saucepan, combine the quartered figs, granulated sugar, honey (or agave), lemon juice, and thyme. Let it sit for about 10-15 minutes.
  3. Cook the Mixture: Place the saucepan over medium heat and stir gently until the sugar dissolves completely.
  4. Let It Simmer: Reduce the heat and let it simmer for about 30-40 minutes, stirring occasionally.
  5. Add the Spice: After about 30 minutes, add the Calabrian chili pepper paste and let it cook for an additional 5-10 minutes.
  6. Check for Consistency: Place a spoonful on a cold plate and check if it holds its shape.
  7. Jar It Up: Turn off the heat and allow your jam to cool slightly before pouring it into sterilized jars.

Notes
