Buffalo Cauliflower with Orzo and Kale

A comforting and flavorful dish featuring spicy buffalo cauliflower paired with creamy orzo and nutritious kale.

Ingredients

  • 1 head cauliflower, cut into florets
  • 1 cup buffalo sauce
  • 1 cup orzo pasta
  • 2 cups kale, chopped
  • Caesar dressing
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper.
  3. Spread the cauliflower evenly on a baking sheet and roast for about 25 minutes, flipping halfway through.
  4. Bring a pot of salted water to a boil and cook the orzo according to package directions, about 8-10 minutes.
  5. Drizzle the roasted cauliflower with buffalo sauce and toss to coat.
  6. Add a drizzle of olive oil to a skillet and sauté the chopped kale until wilted, about 3-4 minutes.
  7. Combine the roasted cauliflower, cooked orzo, sautéed kale, and Caesar dressing in a large serving bowl.
  8. Taste and adjust seasoning with salt, pepper, or buffalo sauce as desired.

Notes

Serve warm and consider topping with fresh parsley or a lemon wedge for extra flavor.
