Ingredients

  • Raclette Cheese (or Gruyère/Emmental as substitutes)
  • Baby Potatoes or Yukon Gold (or sweet potatoes for a twist)
  • Vegetables: bell peppers, zucchini, mushrooms, Brussels sprouts, asparagus
  • Cured Meats: prosciutto, salami, spicy chorizo or plant-based deli slices
  • Pickles: cornichons, pickled jalapeños, onion chutney
  • Fresh Herbs: chives, rosemary, basil

Instructions

  1. Choose your cheese and cut it into manageable pieces for melting.
  2. Wash and boil the potatoes until fork-tender.
  3. Chop your selection of vegetables, drizzle with olive oil, and roast at 400°F (200°C) until tender.
  4. Prepare your meats by slicing them thin, marinating if desired.
  5. Arrange everything beautifully on a platter, keeping the cheese hot.
  6. Take your cheese under the broiler until bubbly and golden.
  7. Allow everyone to assemble their plates with potatoes, melted cheese, vegetables, meats, and fresh herbs.
