Chocolate Chip Zucchini Muffins

Deliciously soft and sweet Chocolate Chip Zucchini Muffins, a perfect blend of comfort food and hidden veggies.

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin by lightly greasing it or lining it with paper liners.
  3. Grate the zucchini and squeeze it in a towel to remove excess moisture.
  4. Mix the all-purpose flour, sugar, brown sugar, baking powder, baking soda, and salt in a large bowl.
  5. Blend the eggs, vegetable oil, and vanilla extract in another bowl, then fold in the grated zucchini.
  6. Combine the wet ingredients with the dry ingredients, folding gently until just mixed.
  7. Add the chocolate chips and walnuts, folding gently.
  8. Scoop the batter into the muffin tin, filling each cup 3/4 full.
  9. Bake for 18–20 minutes or until a toothpick comes out clean.
  10. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins can be served warm with butter or honey. They also freeze well for quick snacks!
