The Ultimate Zucchini Bread

A nostalgic zucchini bread recipe that is moist, flavorful, and perfect for sharing.

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • Optional: Chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your zucchini by grating and squeezing out excess moisture.
  3. Mix dry ingredients in a bowl.
  4. Combine wet ingredients in another bowl.
  5. Fold the wet mixture into the dry ingredients, being careful not to overmix.
  6. Add the zucchini and any optional ingredients.
  7. Pour the batter into a greased 9×5 inch loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For healthier options, reduce sugar or substitute some ingredients. Mini loaves make great gifts!
