Chocolate Chip Zucchini Bread

A warm loaf of chocolate chip zucchini bread, fragrant with cinnamon and perfect for chilly afternoons.

  • 2 cups grated zucchini
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 cup vegetable oil
  • 1/4 cup applesauce
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup chocolate chips

Instructions

  1. Prep your zucchini: Wash and grate your zucchini, squeezing out excess moisture with a cloth.
  2. Preheat the oven to 350°F (175°C).
  3. Mix the dry ingredients: In a bowl, whisk together flour, salt, baking soda, baking powder, and cinnamon.
  4. Combine the wet ingredients: Mix grated zucchini, vegetable oil, applesauce, sugar, eggs, and vanilla extract.
  5. Blend wet and dry mixtures: Gradually stir in dry ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Pour into the greased 9×5 inch loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool for 10 minutes before transferring to a wire rack.

Notes

Serve warm with butter or a dollop of cream cheese frosting for an extra treat. Can be frozen for up to 3 months.
