Maraschino Cherry Cookies

  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup unsalted butter, room temperature
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • A few drops pink gel food coloring
  • 1 cup maraschino cherries, drained and finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, cornstarch, baking soda, and salt in a bowl.
  3. Cream the butter, light brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract, mixing until well combined.
  5. Incorporate the dry mixture into the wet ingredients gradually.
  6. Add the pink gel food coloring, chopped maraschino cherries, and chocolate chips.
  7. Scoop rounded balls of dough onto a lined baking sheet.
  8. Bake for 10-12 minutes until golden around the edges.
  9. Cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

For a different flavor, experiment with white chocolate chips and various extracts.
