  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup chocolate chips
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. Mix the grated zucchini, vegetable oil, egg, and vanilla extract in a bowl.
  4. Combine the flour, cocoa powder, sugar, baking soda, and salt in another bowl.
  5. Merge the dry mixture into the wet mixture, stirring gently until just combined.
  6. Add in the chocolate chips.
  7. Pour the batter into a greased 9×5-inch loaf pan.
  8. Bake for 50-60 minutes until a toothpick comes out clean.
  9. Cool for about 10 minutes in the pan, then transfer to a wire rack to cool completely.
