Moist Chocolate Zucchini Bread

A delightful treat that combines rich chocolate flavors with the subtle earthiness of zucchini for a moist and fudgy bread.

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder (unsweetened)
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 large eggs (at room temperature)
  • 1/4 cup unsalted butter (melted and slightly cooled)
  • 1/4 cup vegetable oil or melted coconut oil
  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips, divided

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it lightly or lining it with parchment paper.
  3. Mix the dry ingredients: flour, cocoa powder, baking soda, and sea salt in a large mixing bowl.
  4. Combine the wet ingredients: eggs, melted butter, vegetable or coconut oil, brown sugar, and vanilla in another bowl.
  5. Join the dry mixture with the wet ingredients, folding gently.
  6. Incorporate the shredded zucchini and 3/4 cup of chocolate chips into the batter.
  7. Transfer the batter into the prepared loaf pan and sprinkle the remaining 1/4 cup of chocolate chips on top.
  8. Bake for about 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

This bread is perfect warm with butter or topped with melted chocolate or powdered sugar. Try adding nuts or spices for variety!
