Cherry Cobbler Muffins

A delightful fusion of classic cherry cobbler and fluffy muffins, perfect for breakfast or an afternoon treat.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tin by greasing it with butter or lining it with muffin cups.
  3. Mix the dry ingredients: flour, sugar, baking powder, baking soda, and salt, in a large bowl until well blended.
  4. Blend the wet ingredients: milk, melted butter, and vanilla extract in another bowl.
  5. Combine the wet and dry ingredients, gently folding until just combined.
  6. Add the cherries, folding them in until evenly distributed.
  7. Fill the muffin cups about three-quarters full and top with brown sugar and cinnamon.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

Serve warm with butter or honey. For storage, keep in an airtight container for 2-3 days or freeze for longer storage.
