Cherry Pie Crumb Bars

A comforting twist on a classic cherry pie, these crumb bars are delicious and easy to enjoy, perfect for any occasion.

  • 1/2 cup unsalted butter, melted and cooled to room temperature
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh cherries, pitted and halved
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon granulated sugar (for the cherry mixture)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×9-inch baking pan by greasing it and lining with parchment paper.
  3. Mix the melted butter and sugar in a large mixing bowl until well combined.
  4. Add flour, baking soda, baking powder, and salt. Stir until a crumbly dough forms.
  5. Reserve about two-thirds of the dough for topping and press the rest into the bottom of the baking dish.
  6. Prepare the cherry filling by tossing cherry halves with cornstarch, lemon juice, and 1 teaspoon of sugar.
  7. Spread the cherry mixture evenly over the crust.
  8. Top with the reserved crumb mixture.
  9. Bake for 35-40 minutes until the topping is golden brown and the cherries are bubbling.
  10. Cool for 15-20 minutes before lifting out and letting cool completely on a wire rack.
  11. Slice into squares and enjoy!

Notes

These bars are best served warm with a scoop of vanilla ice cream or dusted with powdered sugar. They can be stored in an airtight container for up to 3 days.
