Slow Cooker Harvest Chicken Stew

A cozy, heartwarming chicken stew filled with vegetables, perfect for chilly autumn evenings.

Ingredients

  • 2 lbs Chicken, boneless and skinless
  • 34 medium Carrots, peeled and chopped
  • 4 medium Potatoes, preferably Yukon Gold
  • 1 medium Onion, chopped
  • 2 stalks Celery, chopped
  • 4 cups Broth, chicken or vegetable
  • 1 teaspoon Thyme, dried or fresh
  • 2 Bay Leaves
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 cloves Garlic, minced (optional)

Instructions

  1. Prepare your ingredients by chopping the chicken and vegetables.
  2. Set up the slow cooker with non-stick spray.
  3. Layer the onions and celery at the bottom, then add the chicken.
  4. Add the carrots and potatoes for even cooking.
  5. Pour in the broth and add bay leaves, and stir gently.
  6. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  7. Remove the bay leaves and stir, adjusting seasoning if needed.
  8. Serve in bowls, optionally garnishing with fresh herbs or bread.

Notes

For a creamy version, consider stirring in heavy cream or cream cheese during the last 30 minutes of cooking.
