Caramelized Butternut Squash with Creamy Burrata

A delicious autumn dish highlighting the rich sweetness of caramelized butternut squash paired with creamy burrata.

  • 1 unit butternut squash, peeled and cubed
  • 2 tablespoons melted butter
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 250 grams burrata
  • 50 grams pistachios, roughly chopped
  • Fresh mint leaves, a few (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and prep the squash.
  2. Toss together butternut squash cubes, melted butter, honey, cinnamon, and salt in a large bowl.
  3. Spread the mixture evenly onto a baking sheet lined with parchment paper.
  4. Roast for about 25–30 minutes or until fork-tender and caramelized.
  5. Plate the warm butternut squash on a large serving platter and tear burrata into pieces to nestle among the squash.
  6. Garnish with chopped pistachios and fresh mint leaves.

Notes

For an extra tasty touch, drizzle some additional honey on top before serving. Enjoy warm as a side dish or a vegetarian main!
