Apple Pie Breakfast Muffins

  • 1 cup apples, chopped
  • 2 eggs
  • 1 cup dairy (milk or yogurt)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup sweetener (sugar, honey, or maple syrup)
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. Mix the oats (or flour), baking powder, cinnamon, nutmeg, and salt in a large bowl.
  3. Whisk together the eggs, milk (or yogurt), and sweetener until well blended.
  4. Combine the wet ingredients into the dry mix and gently stir until just combined, then fold in the chopped apples.
  5. Fill the muffin tin about 3/4 full with the batter.
  6. Bake for about 20-25 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 5 minutes before transferring to a wire rack.
