Croustade aux Pommes

A decadent French apple tart with flaky pastry and spiced apples, perfect for any occasion.

  • 1 unit Pâte brisée
  • 4 units Apples (e.g., Granny Smith)
  • 100 g Sugar
  • 1 tsp Cinnamon
  • 50 g Butter
  • 1 unit Egg
  • 50 ml Milk

Instructions

  1. Prepare the Pâte Brisée: In a mixing bowl, combine your flour (or gluten-free flour) with a pinch of salt. Add in the cold butter, cutting it into the flour with a pastry cutter or your fingers until it resembles coarse crumbs. Next, add in the egg and a tad bit of cold water, and mix until combined. Don’t overwork it—remember, we want that flaky texture! Wrap your dough in plastic wrap and let it rest in the fridge for about 30 minutes.
  2. Preheat the Oven: While the dough chills, preheat your oven to 180°C (350°F).
  3. Prepare the Apples: Peel, core, and slice your apples. In a large bowl, mix the apple slices with sugar and cinnamon. Let them sit for about 10 minutes.
  4. Roll Out the Dough: Once the dough has rested, on a lightly floured surface, roll it out to fit your tart pan, about 3-5mm thick. Gently place the dough in the pan, trimming off the excess edges.
  5. Fill the Shell: Layer the spiced apple mixture into the shell, arranging it in a spiral or fan shape. Dot with small pieces of butter on top.
  6. Egg Wash & Bake: Whisk the egg with milk and brush over the pastry edges. Bake for about 45-50 minutes until golden brown.
  7. Cooling Time: Once baked, allow the Croustade aux Pommes to cool for a few minutes before slicing.

Notes

Serve warm or at room temperature, with whipped cream or vanilla ice cream. Drizzle with caramel sauce or sprinkle with powdered sugar.
