Apple Cinnamon Crepes

Delightful crepes filled with sweet cinnamon-spiced apples, perfect for a cozy breakfast.

Ingredients

  • 2 cups diced Apples
  • 1 cup Oats or Flour
  • 2 Eggs
  • 1 cup Milk or Yogurt
  • 1 tablespoon Sweetener (sugar, honey, or maple syrup)
  • 1 teaspoon Cinnamon
  • Pinch of Nutmeg
  • 1 tablespoon Butter (for cooking)

Instructions

  1. Combine 1 cup of oats or flour, 2 eggs, 1 cup of milk or yogurt, 1 tablespoon of sweetener, 1 teaspoon of cinnamon, and a pinch of nutmeg. Whisk until smooth and let rest for 15-30 minutes.
  2. Melt 1 tablespoon of butter in a skillet over medium heat. Add 2 cups of diced apples, 2 teaspoons of sugar, and 1 teaspoon of cinnamon. Sauté for 5-7 minutes.
  3. Heat a non-stick skillet and pour about 1/4 cup of the batter. Cook for 1-2 minutes until edges lift, then flip and cook until golden brown.
  4. Place crepes on a plate, add caramelized apple mixture inside, fold or roll. Drizzle with maple syrup.
  5. Serve warm with a dollop of yogurt or whipped cream, and a sprinkle of nuts or powdered sugar.

Notes

Feel free to experiment with different fruits and flavors. Leftovers can be stored in the fridge.
