Apple Cinnamon Coffee Cake

A comforting Apple Cinnamon Coffee Cake that brings warmth and nostalgia to your kitchen.

Ingredients

  • 2 cups of apples, peeled and chopped
  • 1 cup of oats or flour
  • 2 eggs
  • 1 cup of dairy (milk or yogurt)
  • 1 teaspoon of cinnamon
  • 1/2 cup of sugar or sweetener of choice
  • 1/4 cup of butter or oil
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish by greasing an 8-inch square baking dish or lining it with parchment paper.
  3. Mix the dry ingredients: oats (or flour), cinnamon, baking powder, and salt in a large bowl.
  4. Beat the eggs and sugar in a separate bowl until light and fluffy.
  5. Combine the wet ingredients with the egg-sugar mixture, then fold into the dry ingredients until just incorporated.
  6. Fold in the apples gently into the batter.
  7. Pour the batter into the prepared baking dish and spread evenly. Bake for 30-35 minutes.
  8. Cool the cake in the pan for 10 minutes before transferring it to a wire rack.

Notes

This cake is delicious on its own, but also try topping it with powdered sugar or serving with ice cream.
