Apple Cheddar Breakfast Scones

  • 2 cups all-purpose flour
  • 1 cup grated sharp cheddar cheese
  • 1 cup diced apples
  • 1/2 cup rolled oats
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Combine the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  4. Cut in the cold, cubed butter until it resembles coarse crumbs.
  5. Fold in the rolled oats, diced apples, and grated cheddar.
  6. Whisk together the eggs and milk in a separate bowl.
  7. Pour the wet ingredients into the dry mixture and stir until just combined.
  8. Turn the dough onto a lightly floured surface and pat it into a circle about 1 inch thick.
  9. Cut into wedges or use a biscuit cutter.
  10. Bake for 15-20 minutes or until golden brown.
  11. Cool on a wire rack for a few minutes, then serve warm.
