Delightful Apple Butter English Muffins

Cozy and scrumptious muffins made with fresh apples and warm spices, perfect for breakfast or a snack.

Ingredients

  • 3 to 4 medium-sized Apples
  • 1 ½ cups Oats or Flour
  • 2 large Eggs
  • ½ cup Dairy (milk or yogurt)
  • 1 teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • ½ cup Sugar or Honey

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  2. Core and chop your apples into small chunks.
  3. In a large mixing bowl, combine your oats or flour, cinnamon, nutmeg, and sugar. Whisk together.
  4. In a separate bowl, beat your eggs, then add in the milk or yogurt and your chopped apples. Stir until well-combined.
  5. Pour the wet mixture into your dry mixture and gently fold them together.
  6. Spoon the mixture into your muffin tin, filling each cup about ⅔ full.
  7. Pop the muffin tin into your preheated oven and bake for about 18-20 minutes.
  8. Once baked, let them sit for five minutes in the pan before transferring to a cooling rack.

Notes

For a vegan version, substitute eggs with flax eggs and dairy with almond or oat milk.
