Apple Almond Baked Oats

Cozy and hearty baked oats packed with apples and almond butter, perfect for breakfast or a sweet snack.

Ingredients

  • 2 cups rolled oats
  • 2 apples, peeled and diced
  • 2 eggs
  • 1 cup milk or dairy alternative
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup or honey
  • 1/2 cup almond butter or nuts of choice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a medium-sized baking dish or an 8×8 square pan with cooking spray or a bit of almond butter.
  3. Mix the rolled oats, cinnamon, baking powder, and pinch of salt in a large bowl.
  4. Add the eggs, milk, maple syrup, and vanilla extract into the bowl and whisk until smooth.
  5. Toss in the diced apples and almond butter until evenly distributed.
  6. Pour the mixture into the greased baking dish, spreading it evenly.
  7. Bake for about 30-35 minutes, or until golden brown and the center is set.
  8. Cool the dish for a few minutes before serving.

Notes

Great for meal prep and can be stored for re-heating throughout the week.
