20-Minute Roasted Zucchini

A quick and satisfying roasted zucchini recipe that enhances the vegetable’s natural sweetness.

  • 4 small zucchini (quartered lengthwise)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • ½ teaspoon dried basil
  • ½ teaspoon seasoned salt
  • ½ teaspoon dried Italian seasoning
  • ⅛ teaspoon salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grab those zucchini, wash them thoroughly, quarter lengthwise, and place in a large mixing bowl.
  3. Drizzle the olive oil over the zucchini and toss in the minced garlic.
  4. Sprinkle the dried basil, seasoned salt, Italian seasoning, and regular salt over the zucchini.
  5. Spread the zucchini evenly on a baking sheet.
  6. Let them roast for about 15-20 minutes, turning halfway through.
