Ultimate Loaded Chicken Nachos

Delicious loaded nachos stacked high with shredded chicken, creamy cheese, and a mountain of fresh toppings, perfect for game day gatherings or cozy nights in.

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cooked chicken
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (4 oz) can diced green chilies
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 (13 oz) bag tortilla chips
  • 2 cups shredded Mexican blend cheese
  • ½ cup fresh tomatoes, diced
  • ½ cup red onion, finely chopped
  • ¼ cup sliced jalapeños (optional)
  • 1 avocado, diced
  • ¼ cup sour cream
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté onion and garlic in olive oil until translucent.
  3. Mix in chicken, black beans, green chilies, chili powder, cumin, salt, and pepper; cook until heated through.
  4. Prepare a single layer of tortilla chips on a baking sheet.
  5. Layer with chicken and bean mixture, and top with shredded cheese.
  6. Bake for 10-12 minutes until cheese is melted and bubbly.
  7. Add toppings of tomatoes, red onion, jalapeños, avocado, sour cream, and cilantro.

Notes

For best results, layer toppings properly to avoid soggy nachos. Serve immediately.
