Strawberry Fields Salad

A vibrant salad that combines fresh strawberries, mixed greens, and a tangy dressing for a sweet yet savory experience.

  • 6 cups of mixed greens
  • 1 cup of sliced fresh strawberries
  • ½ thinly sliced red onion
  • 1 cup of dried cranberries
  • ½ cup of crumbled feta cheese
  • ½ cup of glazed pecans
  • 4 slices of turkey bacon
  • 2 chicken breasts
  • 3 tablespoons of apple cider vinegar
  • 2 tablespoons of honey
  • 1 tablespoon of Dijon mustard
  • ½ cup of olive oil
  • White sugar (to taste)

Instructions

  1. Prepare the dressing: In a small bowl, whisk together apple cider vinegar, honey, Dijon mustard, and olive oil.
  2. Cook the turkey bacon in a skillet over medium heat until crisp.
  3. Grill the chicken breasts seasoned lightly with salt and pepper until cooked through.
  4. Assemble the salad by combining mixed greens, strawberries, red onion, cranberries, feta cheese, pecans, and grilled chicken in a large bowl.
  5. Drizzle the dressing over the salad and toss gently to coat.
  6. Serve the salad on individual plates or in a large bowl, garnishing with extra feta and pecans if desired.

Notes

You can prepare the ingredients ahead of time. Keep the dressing separate to avoid soggy greens.
