Smoky BBQ Chicken Grilled Cheese

A flavorful twist on a comfort classic, featuring grilled chicken thighs, smoky BBQ sauce, and gooey melted cheese.

  • 2 Grilled Chicken Thighs, cooked
  • 1/2 cup BBQ Sauce
  • 1/2 Mashed Avocado
  • 4 slices Pepper Jack Cheese
  • 4 slices Bread (sourdough, whole wheat, or ciabatta)
  • 2 tablespoons Butter

Instructions

  1. Grill the Chicken Thighs: Preheat your grill to medium-high heat. Season the chicken thighs with salt, pepper, and seasoning, and grill for about 5-7 minutes on each side, until done. Let them rest before slicing.
  2. Mix the BBQ Sauce: Toss the grilled chicken pieces in BBQ sauce until coated.
  3. Prepare the Mashed Avocado: Mash the avocado with lime juice, salt, and pepper.
  4. Assemble the Sandwich: Butter one side of a slice of bread, place it butter-side down, and layer with cheese, BBQ chicken, avocado, and another slice of cheese. Butter the top slice of bread.
  5. Grill to Perfection: Cook until golden and crispy, about 4-5 minutes each side.
  6. Slice and Serve: Let it cool for a minute, then cut the sandwich in half and enjoy!

Notes

Serve with a side of crispy sweet potato fries or a summer salad. For dipping, extra BBQ sauce is recommended.
