  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup mayonnaise
  • 12 tablespoons sriracha
  • 1 teaspoon lime juice
  • 2 cups cooked jasmine or brown rice
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1 cup cucumber slices
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds (optional)
  • Soy sauce or tamari for drizzling (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Combine the shrimp with the smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Cook the shrimp in the skillet for about 2-3 minutes on each side, until pink and opaque.
  4. Mix the mayonnaise, sriracha, and lime juice in a small bowl to make the spicy mayo.
  5. Taste the mayo and adjust the spiciness if needed.
  6. Add cooked rice as a base in serving bowls.
  7. Top each bowl with shrimp, carrots, cucumber slices, and avocado.
  8. Drizzle spicy mayo over the bowls.
  9. Garnish with green onions, sesame seeds, and soy sauce if desired.
