Refreshing Creamy Cucumber Dill Salad

A delightful summer salad that combines fresh cucumbers with creamy yogurt and dill, perfect for picnics and BBQs.

Ingredients

  • 2 large cucumbers
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prep your cucumbers: Wash and peel if desired, slice in half, scoop out seeds, and cut into half-moons or cubes.
  2. Mix the creamy base: Combine Greek yogurt, lemon juice, minced garlic, chopped dill, salt and pepper in a bowl and stir until smooth.
  3. Combine it all: Toss cucumber slices into the yogurt mixture and fold gently.
  4. Chill it out: Refrigerate for at least 30 minutes to allow flavors to meld.
  5. Serve and enjoy: Give it a stir before serving and garnish with olive oil and herbs if desired.

Notes

You can make this salad ahead of time but add cucumbers shortly before serving for crunch.
