MVP BBQ Pulled Chicken Sandwiches

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup barbecue sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • 6 soft sandwich buns
  • 2 cups classic coleslaw
  • 2 tbsp unsalted butter (optional)
  • Dill pickle slices (optional)

Instructions

  1. Prep and season the chicken by sprinkling it with smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Warm the olive oil in a large skillet over medium heat.
  3. Sear the chicken for about 5-7 minutes on each side until golden brown.
  4. Create the sauce by adding barbecue sauce, apple cider vinegar, brown sugar, and Worcestershire sauce to the skillet; simmer for 3-4 minutes.
  5. Shred the cooked chicken using two forks.
  6. Mix the shredded chicken back into the sauce and let it simmer for another 5 minutes.
  7. Toast the sandwich buns in melted butter if desired.
  8. Assemble the sandwiches by adding pulled chicken, coleslaw, and pickles to the buns.
  9. Serve warm and enjoy!

Notes

For a healthier option, skip the unsalted butter for toasting. Serve with fries, chips, or a salad.
