Lemon Herb Grilled Chicken

  • 4 chicken breasts (boneless and skinless)
  • 1/4 cup olive oil (extra virgin)
  • 2 lemons (juiced)
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh thyme (chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the olive oil, lemon juice, parsley, thyme, minced garlic, salt, and pepper. Stir until it’s well blended.
  2. Marinate the Chicken: Place the chicken breasts in a Ziplock bag or shallow dish, and pour the marinade over them. Make sure each piece is generously coated. Seal the bag or cover the dish with plastic wrap.
  3. Preheat the Grill: Preheat your grill to medium-high heat.
  4. Grill the Chicken: Once the grill is hot, carefully place the marinated chicken breasts on the grill. Cook for about 6-8 minutes on each side, until they reach an internal temperature of 165°F (75°C).
  5. Let Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes before serving.

Notes

For the best flavor, let the chicken marinate for at least 30 minutes or up to overnight. Serve with a side salad or grilled veggies.
