Lemon Herb Chicken Salad

A vibrant and flavorful chicken salad featuring tender chicken, crunchy greens, and a zesty lemon dressing.

  • 2 cups cooked chicken, shredded or chopped
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ¼ red onion, thinly sliced
  • ½ cup celery, diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • ½ cup Greek yogurt
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare the Chicken: Shred or chop the cooked chicken into bite-sized pieces.
  2. Mix the Salad Greens: Toss together mixed salad greens, sliced cucumber, halved cherry tomatoes, diced celery, and thinly sliced red onion.
  3. Make the Dressing: Whisk together Greek yogurt, olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper until smooth.
  4. Combine Everything: Pour the dressing over the salad and toss gently until well-coated.
  5. Add Fresh Herbs: Sprinkle chopped parsley and basil over the salad and toss once more.
  6. Serve It Up: Plate the salad and drizzle any remaining dressing over the top.

Notes

Can be made ahead of time; keep dressing separate until serving to maintain crisp greens.
