  • 2 lemons (juiced)
  • 4 cloves garlic (minced)
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh parsley (for garnish)

Instructions

  1. Marinate the Chicken: In a large bowl, combine the lemon juice, minced garlic, olive oil, salt, pepper, and oregano. Whisk everything together until well combined. Add the chicken breasts to the bowl, making sure they are well coated with the marinade. Cover the bowl and let it marinate for at least 30 minutes (or up to 2 hours if you have the time) in the refrigerator.
  2. Preheat Your Pan: While your chicken is marinating, preheat a large skillet over medium heat. Add a drizzle of olive oil to the pan—just enough to coat the bottom.
  3. Sear the Chicken: Once the pan is hot, carefully place the marinated chicken breasts in the skillet. Sear for about 6-7 minutes on one side without moving them—this helps achieve that lovely golden crust. Flip the chicken and cook for another 5-7 minutes on the other side until they’re cooked through and no longer pink in the center.
  4. Plate and Garnish: Once your chicken is beautifully cooked, transfer it to a serving plate. Drizzle any remaining pan juices over the chicken for added flavor, and sprinkle with fresh parsley.

Notes

Feel free to add crushed red pepper flakes to the marinade for a spicy kick! Experiment with different herbs or serve alongside roasted veggies or a light salad.
