Lemon Basil Grilled Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1/4 cup fresh basil leaves (finely chopped)
  • 2 garlic cloves (minced)
  • 1 teaspoon honey (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, basil, garlic, and the optional honey.
  2. Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated.
  3. Prepare the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).
  4. Grill the Chicken: Remove the chicken from the marinade and let any excess drip off. Season both sides with salt and pepper. Place chicken on the hot grill. Close the lid and grill for about 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
  5. Let It Rest: Once cooked through, remove the chicken from the grill and let it rest for about 5 minutes.
